Buffalo Burger #1               


Ingerdients:


1/2 cup butter softened

1 green onion, finely chopped

2 tableespoon chopped cilantro

1 tablespoon chopped parsley

1 small hot red pepper, finely minced

10 pounds lean ground buffalo meat


Preparation:   

Combine butter, cilantro, parsley,  and hot red pepper. On foil or wax paper, form mixture into a thick cylinder, about 1 inch diameter. Wrape and freeze the butter cylinder. Place groubd buffalo into large pan. Cut frozen butter into six 1/2inch lengths. Freeze remaining butter for use another day. Make a depression in the center of meat. Place the butter into meat and seal inside. Shape meat into patty cook in 350 degree oven until done. Serven on bun with fries peppers and onions, along with your favorite condimemts.

Teriyaki Burger #2


INGREDIENTS:


10lb ground beef

4 slices of bread, crumbled

1/2 cup finely chopped onions

2 eggs, slightly beaten

1 tablespoons sugar

1/4 cup water

1 clove garlic, finely minced

1/8 teaspoon ground ginger


Preparation:


Combine ground beef and remaining ingredients in large bowl; blen well shape beef into giant patty cool in 350 degree oven until done. Serve on bun with comdiments.

Green Chile Burger #3


Burger cooked with cheese and topped with green chile, tomatose,and  onions.


INGREDIENTS:


10 pounds ground beef

1 clove garlic crushed and finely minced

1 teaspoon ground black or seasoned pepper

1 teaspoon grounsd chile mild

1 teaspoon salt

12 slices monterey jack cheese or 1 cup shredded Mexican blend of cheese

1 can ( 4 ounces ) chopped mild green chili peppers, drained

2 large sliced sweet onion

2 medium tomatos, sliced

half head lettuce, romaine or your favorite.


PREPARATION:


Mix ground beef with garlic, pepper, ground chile, and salt in larger bowl. shape into giant patty. Preheat oven to 350 degrees. cook until done. just before serving, place cheese on giant patty. Top the bun with meat patty and green chilepepper, the onion slices, tomato slices, and lettuce. Serve burger with a bowl of salsa on the side.




Rueben Burger #4


This open-face burgeris placed on bun half, topped with sauerkraut, swiss cheese, and onion, then top this burger off with thousand Island dressing and dill pickle slices.


INGREDIENTS:


2 small onions, sliced

1 tablespoon butter

10 pounds ground beef

1 16 inch giant bun

8 to 16 ounces sauerkraut, drained and rinsed

12 slices swiss cheese

Thounsand Island Dressing, optional

dill pickle slices, optional


PREPARATION:


Sautue' the onion slices in butter; set aside. Shape groung beef into giant patty; cook in oven at 350 degree until done. place hamburger patty on bun on a broiler rack. Top burger with sauerkraut, onions and cheese. boil until cheese is melted. Serv with Thousand Island dressing or picklr slices if desired




Tangy Hamburger #5


INGREDIENTS:


10 puonds ground beef

1/2 cup fresh lemon juice

4 tablespoons melted butter

2 tablespoons fresh lemon juice

1 teaspoon poultry seasoning or thyme


form the giant hamburger patty brush meat with 1/2 cup fresh lemon juice


PREPARATION:


Blend melted butter, 2 tablespoons fresh lemon juice, and poultry seasoning; brush over patty. cook in 350 degree oven bast with butter and lemon juice mixture until done. dress bun with yout favorite comdiments.


                                               


 




Bistro Cheeseburger #6


Ingredients

• 10 pounds ground beef

• 2 whole slices sweet onion

• 12 slices Swiss process cheese food

• 1/4 cup mayonnaise

• 3 oz tablespoon Dijon-style mustard

• 1- 16 inch giant bun

• Romaine lettuce, tomato slices


Preparation

1. Lightly shape ground beef into giant patties. Brush onion with oil. Place pattie in oven at 350 degrees, ; arrange onion around patties. cook, 13 to 15 minutes to medium (160°F) doneness, until pattie  not pink in center and juices show no pink color and onions are tender. Season with salt and pepper  About 1 minute before pattie is done, top pattie with 12 cheese slices.

2. Combine mayonnaise and mustard; spread on top halves of bun. Serve burgers and onion with lettuce and tomato.


For smallers burgers:( use 1 1/2 pound ground beef, 4 slices onion, 8 slices cheese, 1/4 cup mayonnaise

1 tablespoon mustard, 4 crusty rolls,toasted, romaine lettuce,tomato slices





Cheeseburgers with Spicy Ranch Sauce #7


Ingredients

• 10 pounds ground beef

• 12 slices American cheese

• 1 giant hamburger buns split

• half head Romaine lettuce leaves

• 2 whole Tomato slices


Pre Spicy Ranch Sauce

• 1/2 cup prepared ranch salad dressing

• 2 tablespoons fresh cilantro

• 2 tablespoons canned, chopped green chilies

• 1 tablespoon green jalapeño hot pepper sauce

1. Combine Spicy Ranch Sauce ingredients in large bowl; cover and refrigerate until ready to use.

2. shape ground beef into giant patties. Place patties in oven at 350 degrees, 11 to 13 minutes to medium (160°F) doneness, until no longer pink in center and juices show no pink color, About 1 minute before burger is done, top with cheese slices.

3. Line bottom of each bun with lettuce and tomato, as desired; top with burger. Spoon sauce evenly over burgers. Close sandwiches.

For 8 smaller burgers: 2 pounds ground beef,8 slices American cheese,1/2 cup prepared ranch salad dressing, 2 tablespoons fresh cilantro,2 tablespoons canned, chopped green chilies,1 tablespoon green jalapeño hot pepper sauce use partion above ( cook these small burgers on grill )




Ranch Burgers Recipe #8



Ingredients

• 10 pounds ground beef

• 4 teaspoons Ranch Rub (recipe follows)

• 1 gianthamburger buns, split

• 1/2 cup prepared creamy ranch dressing

• 4 tablespoons canned French-fried onions

•  half head Romaine lettuce, tomato slices


Ranch Rub  ( ad 1 teaspoon more of each Ingredient for giant burger )

• 2 teaspoons sweet paprika

• 2 teaspoons dried thyme

• 1 1/2 teaspoons salt

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1/2 teaspoon ground black pepper

• 1/2 teaspoon ground red pepper

• 1/2 teaspoon ground white pepper


Preparation

1.  shape ground beef into giant patties. Press Ranch Rub onto patties.

2.  Place patties in 350 degree oven; cook 12 to 15 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color,

3. Serve on buns with dressing, onions, lettuce and tomato.


For smaller burgers use:
1 1/2 pounds ground beef,4 teaspoons Ranch Rub (recipe follows),4 hamburger buns, split, 1/4 cup prepared creamy ranch dressing,2 tablespoons canned French-fried onions,Romaine lettuce, tomato slices,Heat large nonstick skillet over medium heat until hot. Place patties in skillet; cook 12 to 15 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color, turning once.




Sweet Hawaiian Mini Burgers and Giant Burger #9




Ingredients


• 10 pound ground beef chuck

• 6 teaspoons Worcestershire sauce

• 2-4 canned pineapple slices

• Salt

• 1 giant bun

• Lettuce

Sauce    ( make this sauce twice for giant burger )

• 1/4 cup barbecue sauce

• 1/4 cup pineapple preserves

• 1 tablespoon packed brown sugar


Preparation

1. Combine ground beef and Worcestershire sauce in medium bowl, mixing lightly but thoroughly. Shape into twelve 1/2-inch thick mini patties.( giant burger 1 large patty. )

2. Combine sauce ingredients in small saucepan; bring to a boil, stirring frequently. Remove from heat.

3. Place pineapple slices on rack in broiler pan so surface of pineapple is 3 to 4 inches from heat. Broil 3 to 4 minutes, turning once and brushing with sauce. Remove pineapple; keep warm. Place patties on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 7 to 8 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color, turning halfway through and brushing with sauce. Season with salt, as desired.

4. Cut each pineapple slice into thirds. Line bottom of each roll with lettuce; top with a burger, then with a pineapple piece. Close sandwiches. ( cook giant meat patt in 350 degree oven ) until done.


For Smaller burgers:1 pound ground beef chuck,4 teaspoons Worcestershire sauce,4 canned pineapple slices,Salt,12 Hawaiian sweet or small dinner rolls, split,Lettuce,




McDonald's Big Mac Sauce
#10

1/3 cup low-fat mayonnaise
2 teaspoons dill pickle relish
2 teaspoons ketchup
2 teaspoons sugar
2 teaspoons yellow mustard
1 tablespoon + 1 teaspoon finely chopped white onion

In a small bowl, combine the mayonnaise, relish, ketchup, sugar and mustard. Stir to blend well. Cover and refrigerate for up to 1 month.

Stir in the onion just before serving.


Chicken Burgers Recipe #12

 



Ingredients

• 10ib pounds ground chicken
• 1 cup panko (Japanese bread crumbs)
• 2 egg, lightly beaten
• 2 green onions, thinly sliced
• 3 tablespoons chopped cilantro
• 3 clove garlic, minced
• 2 teaspoon Asian hot chili sauce
• 2 teaspoon salt
• 1 tablespoon vegetable oil
• 1/2 cup bottled teriyaki glaze
• 4 teaspoons honey
• 1 16 inch giant sesame bun
• 6 leaves red lettuce
• 2 cucumber, peeled, seeded, halved and thinly sliced lengthwise
• Ginger Mayonnaise (recipe follows)
• cilantro sprigs


Ginger Mayonnaise

• 1/2 cup mayonnaise
• 2 teaspoons sweet pickle relish
• 2 teaspoons minced fresh ginger
• 2 teaspoons lime juice
• 1 clove garlic (minced)
• 1/4 teaspoon salt


Preparation

In large bowl, mix together chicken, panko, egg, onions, cilantro, garlic, chili sauce and salt. With oiled hands, form into 4 patties. In small bowl, mix together teriyaki glaze and honey. In large nonstick frypan over medium high heat, place oil. Add chicken and cook, turning and brushing with teriyaki glaze, about 10 minutes or until done. Place burgers on toasted buns and top with lettuce, cucumber and Ginger Mayonnaise. Garnish with additional cilantro and cucumber slices.

• Ginger Mayonnaise: In small bowl, mix together all ingredients.

 

 






Blue Cheese Burgers #14



Ingredients

• 10 pound ground beef
• 4 oz blue cheese, crumbled
• 2 whole onions thin slices
• 1 1/2 tablespoons olive oil
• 1 cup blue cheese dressing
• Pepper to taste


Preparation

Add crumbled blue cheese to ground beef and mix, then form into meat. Brush onion slices with oil and add burgers(oven) and onions to grill. Cook burgers to desired doneness. Spread blue cheese dressing on buns and top each pattie with grilled onion.




Guacamole Burgers #15



Ingredients

• 3/4 cup mashed ripe avocado
• 3/4 cup chopped tomato
• 2 tablespoon minced onion
• 2 teaspoon salt
• 1 teaspoon chili powder
• Dash of red pepper
• 2 small garlic clove, crushed
• 2 teaspoon lemon juice
• 10 pound ground beef
• 1- 16 inch giant hamburger bun 

Preparation
In a bowl, mix together avocado, tomato, onion, salt, chili powder, red pepper, garlic and lemon juice to make guacamole. Form ground beef into 1 patties. Grill cook in oven for about 5 minutes  or until desired doneness. Place patties onto giant bun and top with guacamole. Serving suggestion: Serve with corn chips and remaining guacamole on the side.

Ingredients
• 10 pounds ground beef
• Salt to taste
• 1 1/2 teaspoon onion powder
• 1 teaspoon pepper

Ingredients                                             
• 10 pounds lean ground beef
• 3 cloves garlic, finely chopped
• 1 envelope onion soup dry mix
• 2 tablespoons green peppercorns
• 1 tablespoon thyme
• 2 tablespoons
Dijon mustard
• 2 tablespoons Worchestire sauce


Preparation

In a mixing bowl, add all ingredients and combine well. Form into 1 patty. cook in 350 degree oven to desired level of doneness. Serve with cheese on 16 inch giant hamburger bun.




#22  Zippy Mustard Sauce

3/4 cup Miracle Wip Dressing
2 tablesspoons prepared Mustard
2 1/2 teaspoon Worcestershire sauce

.Mix ingredients until well blended; refrigerate.
                                                    Makes 3/4 cup

1/4 cup seeded chopped cucumber
1 tablespoon chopped onion

            Skippy Burgers
"A drunken fraternity brother taught me this recipe. It's remarkably good. I usually add more Worcestershire sauce, beer and garlic salt during cooking. To fully cook the onions and jalapenos, the burger will need to be well done. Serve on bun with your favorite condiments."
 
 
INGREDIENTS
·     1 pound ground beef
·     1/2 cup dry bread crumbs
·     2 tablespoons Worcestershire sauce
·     1/2 teaspoon garlic salt
·     ground black pepper to taste
·     1 (12 fluid ounce) can or bottle dark beer
·     1/2 cup finely chopped onion
·     1 fresh jalapeno chille  pepper, finely chopped
DIRECTIONS
1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. In a large bowl, mix together ground beef, dry bread crumbs, Worcestershire sauce, garlic salt, ground black pepper and approximately 1/2 of the dark beer. Mix until firm enough to form patties, using remaining dark beer as necessary.
3. Shape ground beef mixture into giant patty.  In  the center of the patties, press onion and jalapeno. Into top of the giant meat patty.
4. Place patty on the prepared grill, and cook 5 minutes per side, or to desired doneness.

"Cumin is one of my favorite spices. This recipe utilizes ground and whole cumin seeds. Serve these burgers  with shredded Co-Jack cheese, fresh cilantro, and diced tomatoes."
INGREDIENTS
·     10 pound ground beef
·     3 teaspoons ground cumin
·     3 teaspoons cumin seeds
·     1 cup whole corn kernels, cooked
·     salt and pepper to taste
DIRECTIONS
1. Preheat grill for high heat.
2. In a large bowl, combine beef, ground cumin, cumin seeds, corn, and salt and pepper. Mix together and form into giant  patty.
3. Lightly oil grate, and place patty onto grill. Cook for 3 to 4 minutes per side, or until cooked through.

1. Preheat the grill for high heat.
2. In a bowl, mix the beef, pepperoni, bread crumbs, garlic, salt, and pepper. Form into giant patty.
3. Oil the grill grate. Place giant  burger patty on the grill, and cook   until well done.

INGREDIENTS
·     10 pounds ground beef
·     3 tablespoons Worcestershire sauce
·     1 1/2 tablespoons dried basil, or to taste
·     1/4 teaspoon garlic salt
·     1/4 teaspoon ground black pepper
·     4 hamburger buns, split
DIRECTIONS
1. Preheat an outdoor grill for high heat.
2. In a bowl, mix the ground beef, Worcestershire sauce, basil, garlic salt, and pepper. Form the mixture into giant meat patty.
3. Lightly oil the grill grate, and cook burger about 6 minutes, turning once, to an internal temperature of 160 degrees F (70 degrees C), or to desired doneness. Serve on hamburger bun.
